A restaurant’s ventilation system is completely different from standard air conditioning. We are not just recirculating cold air; we are ripping thousands of cubic feet of hot, greasy, smoke-filled air out of the building every single minute, and we have to replace every cubic foot we steal.

Chapter 1: The Physics of Kitchen Air Balancing and Building Pressure

To understand kitchen ventilation, you must understand the basic law of air replacement: Air out must equal air in. A Type I commercial kitchen exhaust hood (designed for grease and smoke) acts like a massive vacuum cleaner.

What is Negative Pressurization?

If your exhaust fan is pulling 4,000 Cubic Feet per Minute (CFM) out of the kitchen, but your makeup air unit (MAU) is broken and only bringing in 1,000 CFM, the building is missing 3,000 CFM. Nature abhors a vacuum. The building enters a state of severe negative pressure.

Ideal Balance: 80/20 Rule

To maintain perfect building pressurization, HVAC engineers typically design the Makeup Air Unit to replace exactly 80% to 90% of the air being exhausted by the hood. The remaining 10% to 20% is intentionally drawn from the dining room.

Chapter 2: Upblast Exhaust Fan Mechanics and Diagnostics

The workhorse of the kitchen is the centrifugal upblast exhaust fan mounted on the roof. These fans are specifically designed to handle heavy grease and high temperatures.

Because Treasure Valley water is full of calcium, evaporative coolers require intense maintenance. Technicians must replace media pads annually and install continuous bleed-off valves to prevent calcium concentration from calcifying the pads into solid bricks.

In the winter, commercial kitchens use Direct-Fired Gas Makeup Air Units to instantly heat massive volumes of freezing outdoor air with nearly 100% thermal efficiency.

Sequence of Operation

When the winter makeup air switch is flipped, the blower starts, airflow is proven by a pressure switch, and the burner ignites. A flame sensor must detect a steady microamp signal through flame rectification within 4 seconds, or the board slams the gas valve shut.

Chapter 5: Electrical Interlocks and Fire Suppression Integration

According to mechanical codes, the makeup air unit cannot run unless the exhaust fan is running. This is managed through electrical interlock relays.

Why is my kitchen completely filled with smoke when the exhaust fan is running?

First, check your makeup air. If the MAU is broken or the filters are plugged, the exhaust fan cannot pull air out of a negatively pressurized vacuum. Second, verify the exhaust fan fan belt hasn't snapped or slipped, drastically lowering the fan's RPM.

Why do my restaurant's front doors violently slam shut?

Your building is under severe negative pressure. The exhaust fan is removing thousands of CFM of air, but your makeup air unit is not replacing it. This vacuum effect pulls the doors closed and sucks unconditioned air in through every crack in the building.

Can I turn off my makeup air unit in the winter to save on gas bills?

Absolutely not. Turning off the makeup air unit violates mechanical codes, cripples the performance of your exhaust hood (filling the kitchen with smoke), causes negative pressurization, and risks pulling deadly carbon monoxide down the flues of your water heaters.

How often should I change the pads in my swamp cooler?

In areas with hard water like the Treasure Valley, evaporative cooler media pads should be replaced at the start of every spring cooling season. If the pads become completely calcified mid-summer, they must be replaced again to ensure proper airflow and cooling capacity.
